This gingerbread oatmeal bar is incredibly delicious. It’s perfect for a recent fall or a cold winter morning, or a special breakfast to make during the Holidays. It’s straightforward and fast to make although it will require a minimum of preparation. Oatmeal is quick to cook so you will have breakfast in less than 15-20 minutes. All you have to prepare are the following ingredients: maple syrup, blackstrap molasses, almond butter, oats, pumpkin seeds, walnuts, ground ginger, cinnamon, nutmeg, ground cloves, sea salt, and cacao nibs. This gingerbread oatmeal bar recipe is right for you, if you need something nurturing and warming.

Ingredients:

  • 107 grams Maple Syrup
  • 23 milliliters Blackstrap Molasses
  • 125 grams Almond Butter
  • 81 grams Oats
  • 37 grams Pumpkin Seeds
  • 40 grams Walnuts (roughly chopped)
  • 600 milligrams Ground Ginger
  • 3 grams Cinnamon
  • 550 milligrams Nutmeg
  • 525 milligrams Ground Cloves
  • 2 grams Sea Salt
  • Cacao Nibs

Directions:

  1. Preheat the oven to 325oF (163oC) and line a baking pan with parchment paper.
  2. In a large bowl add the maple syrup, molasses and almond butter and stir well. Add the oats, pumpkin seeds, walnuts, ginger, cinnamon, nutmeg, cloves, cacao nibs and sea salt into the maple syrup mixture. Stir to mix, ensuring everything is well combined.
  3. Pour the mixture into the prepared pan. Wet your fingertips with a bit of water to prevent sticking and smooth down the mixture with your hands. Bake for 16 to 18 minutes.
  4. Let the pan cool for up to 20 minutes. Transfer to the fridge to chill completely for about an hour, and then slice into bars. Serve and enjoy!
