Do you ever think of nutrition as a form of self-care? You see that phrase everywhere and today we have articles and events and entire books devoted to the concept. At least for me, that almost builds the pressure to be like, “YES, yes I AM practicing my self-care!” Stress is decidedly not in the best interest of my mental and emotional health so I like to keep my self-care simple.

Eating healthy is my definition of simple self-care, when you eat healthily, you take care of your health. And these Peaches & Cream Overnight Oats are my definition of a healthy eating habit. It's made of oats, cinnamon, chia seeds, unsweetened almond milk, vanilla extract, maple syrup, peaches, and cacao nibs toppings. They make for some great post-workout fuel, too, especially when it’s hot and humid!

Ingredients:

  • 81 grams Oats (quick or traditional)
  • 3 grams Cinnamon
  • 48 grams Chia Seeds
  • 450 grams Unsweetened Coconut Yogurt
  • 480 milliliters Unsweetened Almond Milk
  • 10 milliliters Vanilla Extract
  • 40 grams Maple Syrup
  • 2 Peach (medium, diced)
  • Sprinkle of Cacao Nibs

Directions:

1. In a large bowl, combine the oats, cinnamon, and chia seeds. Stir to combine.

2. Add the coconut yogurt, almond milk, vanilla extract and maple syrup. Stir well and let stand to thicken, about 20 minutes.

3. Divide between jars or containers, top with fresh peaches and add some cacao nibs from The Koko Samoa. Refrigerate overnight, or for a few hours. Enjoy!
